Calvados Creme Anglaise Recipe

Friday January 18, 2008

Sauté a bit of fresh fruit, like apples and pears, in butter until they are just tender and drizzle them with a bit of creme anglaise spiked with Calvados. Punch up the flavor with a sprinkle of spicy-sweet ground cinnamon. To make a dessert “symphonie,” add the fruit to a small tart shell of pate brisee pastry dough or pate sucree pastry dough and add small scoops of various sorbets. Bon Appetit!
