French Pastry Recipes

French pastries are downright irresistible. From town to town in France, there seems to be a nearly infinite number of pastry dough recipes. Each region has specially guarded secrets and heritage recipes that make their pastry creations unique compared to their neighbors’. Take, for example, the ubiquitous chocolate éclair that seems to be in every patisserie. One recipe calls for a light dusting of cocoa powder over the chocolate glaze, when another adds just a tablespoon of rum to the vanilla filling.
