French Garden Recipes

Friday July 18, 2008

We've spent the summer weeding and tending our garden, and now we have something to show for it. In addition to the mounds of baby spinach and romaine lettuce, my husband brought in the first zucchini of the season. It was a perfect, shiny green baby with the withered blossom still attached. It is so beautiful sitting on my kitchen counter that I'm a little afraid to cook it. Does anyone have an opinion on what recipe I should prepare with my little squash? Here some garden food for thought in the meantime.

I would not mar its tender sweet goodness by doing anything other than slicing it raw and unpeeled into the perfect green salad.

We have so many (about 3 a day!) that I no longer fear messing up a perfect thing. As for the first one, I sauteed it with just a bit of butter, salt, pepper, and dill. The dill was also fresh from the garden, so it had that wonderful aroma.

We harvested the first little zucchini yesterday. Julienned it raw into some steamed, still crunchy green beans, tossed in a bit of summer savory - all fresh from the garden, and enjoyed it very much.
Before too long we’ll be riffling the pages for use of an overabundance of zucchini - but the first one is always special.
Not to mention - before too long the neighbors will pretend not to be home when they see us coming, zukes in hand!
