
Will the real pets de nonne stand up? A small controversy erupted a few weeks ago when I sent out a newsletter featuring a recipe for Canadian pets de nonne. Some were shocked and giggled at the impolite name of "nun's farts." Others were quite offended that the original French version of pets de nonne, an airy choux fritter, had been degraded to a recipe to use up spare pastry scraps. Having enjoyed both easy French recipes several times, I can't choose a favorite and simply don't see a thing wrong with either version. Do you have a favorite? I lived in Quebec for 25 years and very much enjoyed the pastry dough recipe. Oh yes, the choux puff recipe is the “original,” but I prefer the sugared pastry crust version. Thank you for discussing the differences – a very interesting article!
