How to make zucchini tart:
In a large pan set over medium-high heat, sauté the zucchini slices in the butter for 3 minutes. Add the herbs and pepper and continue sautéing the mixture for an additional 2 minutes.
Preheat the oven to 375 degrees. Fit the pastry into a deep-dish pie pan. Spread the seasoned zucchini into the pastry. Beat together the eggs, cream, and cheese. Pour the eggs over the zucchini and bake the quiche for 45-50 minutes, until the eggs are set in the middle. Cool slightly and serve.
