Basic Choux Pastry Dough Recipe

This versatile pastry dough can be used in profiteroles, éclairs, and religieuses.

Prep Time: 10 minutes

Total Time: 10 minutes


  • ½ cup butter
  • 1 cup water
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs


In a medium saucepan, melt the butter in the water. Add salt and flour, and stir until a sticky batter is formed. Beat in the eggs, one at a time, until the batter is smooth.

Makes enough dough for 8 medium-sized pastries.

not quite as in recipe, Member memrinston

The mixture seemed too liquid to be dough, so I kept stirring under heat until it thickened. It was great then, although a bit too dense for the eclairs I was making. I expected the baked result to be fluffier. Still, this recipe makes for very delicious dough.
