This crepes recipe is a delicious take on the famous French dessert, Pears Belle Helene.

- 4 oz. semi-sweet chocolate, chopped
- 1/4 cup heavy cream
- 2 pears, peeled and chopped
- Vanilla ice cream
In a double boiler over low heat, gently melt the chocolate. Stir in the cream and pears; heat through.
To assemble crepes: Place 1 tablespoon of the warm pears and chocolate down the center of a warm crepe and roll into a cylinder. Alternately, spread 1 tablespoon of the warm pears and chocolate into the center of a warm crepe and then fold it into quarters. Garnish with vanilla ice cream.
