Almond Coffee Crepes Recipe

Using coffee ice cream as the foundation for this dessert keeps it from getting too sweet and makes for an enjoyable, understated after-dinner experience.

Creative Crepe Batter Recipes:

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients:

  • 4 oz. semisweet chocolate, chopped
  • 1/4 cup heavy cream
  • 1 tablespoon rum
  • 2/3 cup sliced toasted almonds
  • Coffee ice cream

Preparation:

In a double boiler over low heat, gently melt the chocolate. Stir in the cream and rum; heat through. Stir in the almonds.

To assemble crepes: Place 1 tablespoon of the warm almonds and chocolate down the center of a warm crepe and roll into a cylinder. Alternately, spread 1 tablespoon of the warm almonds and chocolate into the center of a warm crepe and then fold it into quarters. Garnish with coffee ice cream.
