Combining the unique sweetness of fresh figs with saffron-infused sugar syrup, this roasted figs in spiced caramel recipe makes an elegant dessert. Equally sweet raisins and crunchy nuts tucked into the tawny-colored caramel sauce provide a subtle contrast to the figs. Serve the dessert after a dinner of vegetables and roasted poultry or rabbit for an inviting, home-style menu.

Ingredients:

  • 6 figs
  • 2/3 cup granulated sugar
  • 2 teaspoons water
  • 1 teaspoon saffron
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • 1/2 cup raisins (substitute golden raisins)
  • 1 1/4 cups nuts (almonds, walnuts, hazelnuts)

How to make roasted figs with caramel sauce:

Preheat the oven to 375F. Halve the figs lengthwise and arrange them, cut side up, in an ovenproof baking dish. Roast the figs for 15 minutes and then remove them from the oven and drape foil loosely over the pan to keep them warm.

While the figs are roasting, melt the sugar and 2 teaspoons water in a medium size pan set over low-medium heat, shaking the pan occasionally to evenly distribute the sugar. Once the sugar caramelizes, stir in the spices, raisins, and nuts and remove the pan from the heat.

Arrange 3 roasted fig halves on each dessert plate, and garnish it with the spiced caramel sauce, nuts, and raisins. Serve the roasted figs in caramel immediately.
