Cranberry Quatre Quarts Cake

Quatre Quarts translates into “four fourths” and is a traditional French pound cake. Some creative liberties have been taken here with the addition of vanilla and dried cranberries.

Prep Time: 10 minutes

Cook Time: 50 minutes

Total Time: 1 hour

Ingredients:

  • 3 large eggs, separated
  • ¾ cup granulated sugar
  • ¾ cup salted butter
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ¾ cup dried cranberries

Preparation:

Preheat oven to 350 degrees. Butter a 10-inch round cake pan and set aside. Beat egg whites until stiff peaks form. In a separate bowl, cream together the egg yolks, sugar, butter, and vanilla. Stir in the vanilla, flour, and dried cranberries, and then fold in the egg whites. Pour into the prepared pan and bake for 45 – 50 minutes, until it tests done. Cool for 10 minutes in pan, and then transfer to a wire rack for complete cooling.

Makes 10 servings.

This is a sponge cake, so success lays in how stiff you make those egg whites. If not, it will look like a collapsed souffle. I made mine with lemon, not vanilla, used Splenda baking sugar to the tune of half of what the recipe asked for, and added caraway seeds, which packed a wallop with the cranberries. Pour a glass of port over it and bingo!
