This creamy yogurt recipe makes a delicious addition to parfaits, crepes, and breakfast cereals. Flavor the thick, European-style delicacy with fresh berries, a dash of cinnamon, or a drizzle of maple syrup for customized, nutritious indulgence.

Ingredients:

  • 4 cups whole-milk yogurt

Preparation:

Line a colander with a double-layer of cheesecloth (one layer of clean paper towels work in a pinch) and spoon the yogurt into the colander. Refrigerate the yogurt, along with the colander, for 3 to 4 hours. The yogurt is sufficiently thickened when about 1 cup of the whey liquid has drained from it.

I drain my yoghurt as a substitute for ""Quark"" since I moved from Germany to the US. It is so delicious. My favorite additions are herbs, salt, pepper and finely chopped onions. Bye the way - I use Danon's fat-free youghurt. It drains the best. For a creamier taste, add a spoonful of cream cheese or sour cream. That little bit fat won't hurt. This tasts great on WASA crispbread, pumpernickel, and cracker or just straight from the spoon into your mouth!
