This easy, yeast-free beignets recipe is a snap to throw together the morning after your Mardi Gras celebration. For added authenticity, do as they do at the famed Cafe Du Monde, and add a steaming mug of black chicory-coffee brew or a serving of cafe au lait for a complete breakfast.

Prep Time: 10 minutes

Cook Time: 6 minutes

Total Time: 16 minutes

Ingredients:

  • ½ cup butter
  • 1 cup water
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs
  • Oil for deep frying
  • 3 tablespoons confectioners’ sugar

Preparation:

In a medium saucepan, melt the butter in the water. Add salt and flour, and stir until a sticky batter is formed. Beat in the eggs, one at a time, until the batter is smooth.

Heat the oil to 375F. Fry mounded teaspoons of dough, several at a time, for about 6 minutes. They are done when they are light, golden brown on each side. Drain them for a few minutes on a clean kitchen towel and serve warm, dusted with the confectioners’ sugar.

This beignets recipe makes 28 to 32 fritters.

This is the same recipe for beignets that the Le Courdon Bleu cookbook has. The difference between this and profiteroles or other pastries is the fact that it is fried. Several french pastries start with the same base and are differentiated by their method of preparation. The difference between this recipe and the one in the book referenced above is that after adding the flour you are supposed to let the dough rest for 15 minutes before adding the eggs. Perhaps that would help those of you who didn't like the taste. They also suggest that you flavor your dough with fruit zest, currants, or candied fruit.
