Raspberry Almond Mille-Feuille / Napoleon

This raspberry almond mille-feuille recipe, also known as napoleons, is as easy as they come. Perfect for last-minute guests, simply thaw frozen puff pastry, bake it, and arrange berries and nuts on pastry cream or whipped cream. This mille-feuilles recipe will have everyone thinking they came from a high-end patisserie.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 sheets puff pastry
  • 3/4 cup vanilla pastry cream
  • 1 1/3 cup fresh raspberries
  • 1/2 cup sliced, toasted almonds
  • 4 baking sheets

Preparation:

Preheat an oven to 400F. Roll each sheet of the pastry into a 15-inch by 10-inch rectangle on a lightly greased baking sheet and prick the surface of the pastry to keep it from rising. Place the remaining baking sheets over the surfaces of the pricked pastry sheets to weigh down the pastry. Bake the covered pastry for 16 to 20 minutes, until the pastry is golden brown.

Cut each pastry sheet into 8 rectangles. Divide the pastry cream among the rectangles. Arrange the raspberries and sliced almonds on the pastry cream-side of half of the rectangles. Place the remaining pastry rectangles, cream-side down, onto the raspberries and almonds. Garnish the tops of the napoleons with additional raspberries, almonds, and whipped cream.
