If youre short on time and need a sophisticated hors doeuvre recipe, this one is great. It takes less than five minutes to prepare and the herbes de Provence accent the silky white beans with understated elegance.

Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, pressed
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary, crushed
- 1/4 teaspoon dried parsley
- ¼ teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons lemon juice
- 1 15-oz can white beans, drained
- ¼ cup roasted red peppers, finely diced
Preparation:
Using a food processor or blender, puree all the ingredients except the red peppers. Add water if necessary, 1 tablespoon at a time, until the bean puree is completely smooth. Stir in the red peppers and serve.
Makes 6 servings.
