White Bean Puree Recipe

If you’re short on time and need a sophisticated hors d’oeuvre recipe, this one is great. It takes less than five minutes to prepare and the herbes de Provence accent the silky white beans with understated elegance.

Prep Time: 5 minutes

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, pressed
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary, crushed
  • 1/4 teaspoon dried parsley
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons lemon juice
  • 1 15-oz can white beans, drained
  • ¼ cup roasted red peppers, finely diced

Preparation:

Using a food processor or blender, puree all the ingredients except the red peppers. Add water if necessary, 1 tablespoon at a time, until the bean puree is completely smooth. Stir in the red peppers and serve.

Makes 6 servings.
