This matelote sauce recipe is best described as a vintage fish sauce recipe. It's very simple to make, given one has fish stock, a sometimes rare pantry commodity, on hand. Use the matelote sauce to enhance broiled fish entrees or drizzle it over seafood stew topped with toasted slices of baguette.

  • 2 tablespoons butter
  • 1 cup fish stock
  • 2 tablespoons crème fraiche

How to make matelote sauce:

Melt the butter in a small saucepan set over medium heat. Whisk the fish stock and crème fraiche into the melted butter and simmer the mixture for 10 minutes.

This matelote sauce recipe makes 1 cup of sauce, or 8 servings.
