- 2 pasteurized egg yolks, room temperature
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 3/4 cups canola oil
- 1 tablespoon white wine vinegar

How to make homemade mayonnaise:
Beat the egg yolks, Dijon mustard, salt, and pepper until the mixture is completely smooth. Whisking constantly, add 1/2 of the oil, very slowly, one drop at a time.
Near the end of this process, the mayonnaise will begin to thicken. At this point, continue whisking and add the remainder of the oil, in a very slow stream. Once the oil has been emulsified, whisk the white wine vinegar into the mayonnaise.
Use the mayonnaise within a few hours or store it in the refrigerator for up to 48 hours.
