Pate Quatre Epices Recipe

By Rebecca Franklin, About.com

This quatre épices recipe, or four spices, is used to season everything, from soups to grilled chicken, in the French kitchen. This version uses cinnamon as a substitute for the more traditional ground ginger. The warm flavor of this spice blend is a perfect spice blend for pâté and terrines.

Prep Time: 2 minutes

Ingredients:

  • 2 tablespoons ground white pepper
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 1 tablespoon ground cloves

Preparation:

Stir the spices together and store in an airtight container in a cool, dark place.

This pâté quatre épices recipe makes 5 tablespoons or slightly less than 1/3 cup of spice mixture.
