I would love to serve recipes using eggplants, but they always seem bitter when I buy them. How can I make mine taste like the ones found in restaurant dishes?

Answer:

The problem isn’t in your cooking methods, but in your buying habits. Most people tend to go for the biggest, shiniest eggplant they can find. Unfortunately, bigger is not better when dealing with this purple produce! Avoid huge, trophy-sized eggplants and choose firm, small to medium fruits with blemish-free skin instead.

Next, check to see if your eggplant is a girl or a boy! A female eggplant has more seeds, lending to its bitter taste. You can identify a female eggplant by observing the indentation at the bottom of the eggplant. It has a deeper, oblong-shaped groove, whereas the male eggplant has a shallow, circular dimple. Always choose the male eggplant when it’s available.
