Answer:

Mirepoix, or mire poix, is a French vegetable combination using equal parts carrots, celery, and onion. It is most commonly used to flavor soups, stews, and sauces. It’s Cajun counterpart, simply known as "The Trinity," is equal parts bell peppers, celery, and onions.
