How to make roasted Cornish hen and grapes:
Preheat the oven to 425F. Mix the Cognac and the oil and rub it over the surface of the Cornish hens. Arrange them, breast-side up, in a large roasting pan and sprinkle them with half of the fresh thyme.
Toss the grapes and shallots in the melted butter and spoon the mixture into the roasting pan, around the hens. Sprinkle the grapes and the birds with the salt and pepper.
Roast the hens and grape mixture for 35 to 45 minutes, until a thermometer inserted into the hens read 165F. Remove the roasting pan from the oven and allow the Cornish hens and roasted grapes to rest for 10 minutes.
