This delectable garlic herb roasted chicken recipe is a deceptively quick and easy way to make a healthy dinner. The garlic, herbs, and vegetables can be adjusted according to personal taste, so it works as the ultimate family meal. Add a crisp, green salad to complete the wholesome menu.

  • 1 large onion, sliced into thin rings
  • 3- to 4-pound chicken
  • 1/4 cup fresh herbs or 2 tablespoons dried herbs (rosemary, sage, parsley, thyme, chives)
  • 6 cloves garlic, shaved or thinly sliced
  • 3 tablespoons butter, cut into small pieces
  • 4 to 5 cups mixed vegetables (potatoes, carrots, leeks, squash)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper


Preheat the oven to 400F. Lightly grease a large roasting pan and arrange half of the sliced onions on the bottom of the pan.

Place the chicken on top of the sliced onions in the pan. Carefully lift the skin on the top of the chicken and insert 3/4 of the herbs, 1/2 of the remaining onions, the shaved garlic and cubed butter between the skin and the meat.

Arrange the mixed vegetables and remaining sliced onions around the chicken in the roasting pan. Drizzle the chicken and the vegetables with the olive oil. With a brush or bare hands, rub the oil over the surface of the chicken. Sprinkle the remaining herbs, salt, and pepper over the chicken and vegetables.

Roast the chicken and vegetables, uncovered, in the preheated oven for 10 to 15 minutes to slightly brown the skin. Tent the entire pan with foil, reduce the heat to 350F and roast it for an additional 1 hour, 15 minutes, until the thigh tests 180F.
