Avocado and Romaine Salad Recipe

This simple salad has the surprise creaminess of rich avocado pieces and the fresh twist of herbs. Use the best balsamic vinegar you can find; it really does influence the final result. Serve the salad with Lobster Bisque for an impressive lunch or dinner.

Total Time: 10 minutes


  • 1 cup grape or cherry tomatoes, halved
  • 1 tablespoon fresh chives, chopped
  • 1 1/3 cup avocado, chopped
  • 3 cups chopped romaine hearts
  • 2 teaspoons fresh parsley, chopped
  • 1 teaspoon fresh dill weed, chopped
  • Balsamic vinegar
  • Extra virgin olive oil


Toss together all ingredients and drizzle with desired amount of balsamic vinegar and olive oil.

Makes 4 servings.
