This salad Lyonnaise recipe, also known as poached egg salad, is an extravagant entree salad. Ingredients:

  • 1 cup frisee lettuce, torn into small pieces
  • 2 strips bacon, cooked and crumbled
  • 1/4 cup croutons
  • 1 poached egg
  • Shallot vinaigrette

Preparation:

Layer a chilled salad plate with torn frisee, crumbled bacon, croutons, and a poached egg. Finish the poached egg salad with a drizzle of shallot vinaigrette.
