Fava Beans with Bacon Recipe

Fava Beans and Bacon

Fava beans are very popular in France when they come into season. French cooks pop them into soups, sautés, and salads. This fava beans with bacon recipe is a perfect side dish or light salad for brunch or dinner.

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients:

  • 3 pounds fava beans
  • 3 tablespoons butter
  • 4 ounces bacon, chopped
  • 3/4 cup chopped yellow onions
  • 2 tablespoons chopped, fresh chives
  • 2 tablespoons chopped, fresh parsley

Preparation:

Bring a medium saucepan filled with water to a rolling boil and simmer the fava beans in the water for about 5 minutes, until they are just tender. Transfer the beans to a bowl filled with ice-cold water. Drain the beans and peel them, discarding the pods.

Melt the butter in large skillet over medium-high heat. Sauté the bacon in the butter until it turns crisp and then transfer it to a plate lines with a paper towel. Add the onions to the skillet and sauté them over medium heat for 10 minutes until they are tender and lightly browned.

Add the bacon, fava beans, chives, parsley, and 1/2 cup water into the skillet with the onions. Bring the mixture to a simmer for 4 minutes. Serve warm or at room temperature.

This fava beans with bacon recipe makes 4 to 6 servings.
