Watermelon with Fennel Salt

This piquant side dish is a perfect example of Martinique’s cuisine. It combines fennel seeds from the South of France with tropical melon and lime for a flavor that is exclusively Caribbean.

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients:

  • 1 tablespoon fennel seeds
  • 1 ½ teaspoons salt
  • 8 1-inch thick wedges watermelon
  • 1 lime, quartered

Preparation:

Using a small skillet over medium-low heat, toast fennel seeds, stirring constantly, for 2-4 minutes. Transfer toasted fennel seeds to a mortar, add salt, and smash with a pestle until the seeds are coarsely ground. Sprinkle the toasted fennel salt over the watermelon wedges and drizzle with limejuice, as desired.

Makes 8 servings.
