Herbed Beans Provencale Recipe

Healthy and appetizing, these creamy beans are seasoned with just the right amount of herbes de Provence. Serve them beside a light marinated chicken or seafood dish with a mellow white wine.

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1 small onion, diced
  • 4 cloves garlic, pressed
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • ½ teaspoon dried parsley
  • ¼ teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 2 15-oz cans white kidney beans, drained

Preparation:

In a medium skillet over medium heat, sauté onions in olive oil until they are tender and translucent. Add garlic, herbs, and salt; lower heat slightly and sauté for 1 minute. Add lemon juice and beans; heat through. Serve warm or at room temperature.

Makes 6 servings.
