Mélange of Onions and Turnips Recipe

This sweet mix of vegetables is excellent with roasted chicken and a glass of very mellow white wine like Savennière.

Prep Time: 5 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 lb small boiling onions
  • 2 tablespoons olive oil
  • 1 ½ lbs white baby turnips, peeled
  • 3/4 teaspoon salt
  • 1/8 teaspoon white pepper

Preparation:

In a deep skillet, sauté the onions in the olive oil over medium-high heat for 8 minutes, until they start to caramelize. Add the baby turnips, salt, and pepper. Stir the mixture, reduce the heat to low, cover, and then cook for 25 minutes. The mélange is done when the vegetables are tender; serve hot.

Makes 8 servings.
