Sautéed Zucchini with Provencal Herbs

Sautéed zucchini with Provencal herbs is an easy, healthy way to add a bit of color and flavor to your French menu. If you can’t find herbes de Provence in your local market, try making your own Provencal herb blend.

Prep Time: 3 minutes

Cook Time: 7 minutes

Total Time: 10 minutes

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 medium zucchini, cut crosswise into 1/4-inch slices
  • 1 teaspoon dried herbes de Provence
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Preparation:

Melt the butter and oil in a large skillet set over medium-high heat. Sauté the sliced zucchini with the herbes de Provence in the hot butter and oil for about 5-7 minutes, until it is crisp-tender with a few caramelized, golden brown spots. Remove from the heat and toss with salt and pepper. Transfer the seasoned zucchini to a serving dish serve hot or warm.

This sautéed zucchini with Provencal herbs recipe makes 4 side dish-sized or 6 garnish-sized servings.
