If you’re longing for the fresh taste of summer without the cloying sweetness of a dessert fruit soup, this chilled fennel melon soup is for you. Boasting an incredible garden-fresh flavor, this recipe is an easy preparation of blending fennel and melon with French anise liquor and rich crème fraiche. It makes a particularly impressive presentation when served at special occasions.

Prep Time: 10 minutes

Ingredients:

  • 1 medium cantaloupe, cubed (about 10 cups)
  • 3 medium fennel bulbs, thinly sliced
  • 1/2 cup crème fraiche
  • 2 tablespoons Pernod (anise liquor)
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Crème fraiche for garnish

Preparation:

Place all the ingredients in a food processor and blend until the mixture is completely smooth. Chill the fennel melon soup in the refrigerator for at least 3 hours before serving. Garnish the soup with the additional crème fraiche and serve in a chilled cup or bowl.
