Garlic Soup Recipe

It’s amazing that a soup with so few ingredients – garlic, bread, and broth – tastes so delicious. Serve this as a light first course.

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 3 tablespoons olive oil
  • 1 head garlic, each clove peeled and sliced
  • 8 slices baguette
  • 4 cups chicken stock
  • ½ teaspoon dried thyme

Preparation:

In medium saucepan over low heat, sauté garlic in oil until tender – about 7-10 minutes total. Transfer the garlic to a plate. Place baguette slices into hot oil and sauté both sides until they are golden brown. Transfer 2 toasts into each soup bowl. Add garlic, chicken stock, and thyme back into the saucepan and bring to a simmer for 5 minutes. Ladle the soup over the garlic toasts and serve immediately.

Makes 4 servings.
