Vanilla-Scented Melon Soup Recipe

Serve this satisfying, colorful soup with poached seafood or chicken and marinated vegetables.

Prep Time: 5 minutes

Ingredients:

  • 5 cups cantaloupe, cubed
  • 1/2 cup plain yogurt
  • 2 tablespoons dessert wine (like Muscat)
  • ¾ teaspoon vanilla extract

Preparation:

Process all ingredients in a blender until smooth. Chill for at least 1 hour before serving.

Makes 4 servings.
